The Aceto balsamico tradizionale di Modena (Traditional Balsamic Vinegar of Modena) is made of grape must without any further component and is the result of its slow acetification, deriving from a natural fermentation and then concentration. The Aceto balsamico tradizionale di Modena develops its aroma during the long aging process in a line of barrels (called batterie) made of different types of wood. According to the Product Specification, it is forbidden to report the years of aging of vinegar, the term affinato means the product has been aged for at least 12 years and guarantees high quality flavours and aroma.
The youngest vinegar is characterized by a dark brown colour, fluent syrupy thickness, brilliant acidity, good body and balance. It combines perfectly with omelettes, vegetables, meat and any dish you want to enrich with a well-balanced flavour and aroma.
Before packing the vinegar, each bottle is evaluated by a committee of expert tasters, whose task is to certify it can be awarded with the Protected Designation of Origin (PDO). You can find the evaluation form in the box.
