The Aceto balsamico tradizionale di Modena (Traditional Balsamic Vinegar of Modena) is made of grape must without any further component and is the result of its slow acetification, deriving from a natural fermentation and then concentration. The Aceto balsamico tradizionale di Modena develops its aroma during the long aging process in a line of barrels (called batterie) made of different types of wood. According to the Product Specification, it is forbidden to report the years of aging of vinegar, the term extravecchio means the product has been aged for at least 25 years and guarantees high quality flavours and aroma.
The extravecchio is characterized by a full dark brown colour, thick syrup, high and well-balanced acidity, a delicate and long lasting aroma and a unique flavour. It is excellent if tasted on a tea spoon as an aperitif or a digestive, but it also combines perfectly with cheese, especially Parmigiano Reggiano, pecorino, ragusano, and robiola, risotto, meat; it is interesting to match it with shellfish or any other dish you like.
Before packing the vinegar, each bottle is evaluated by a committee of expert tasters, whose task is to certify it can be awarded with the Protected Designation of Origin (PDO). You can find the evaluation form in the box.
